This Spicy Cucumber and Watermelon Salad is an easy, healthy and quick recipe! It’s full of seasonal summer produce and so delicious!
I originally made this salad on a whim when we were grilling one weekend this summer. It was one of those dinners where we had planned the main course but I didn’t really think through what to serve with it. I looked around the fridge and had a big bowl of watermelon chunks and some cucumbers. From there I decided a fruity, savory, spicy little side salad would be just perfect! It’s light, healthy and pairs well with champagne which should honestly just be a requirement for salads, don’t ya think? Anyways, I know y’all will love this summer salad as much as we do!

Spicy Cucumber and Watermelon Salad
This salad is really quick and easy! We actually had watermelon that was already cut up so it was super easy. It only took a few minutes to throw this together. I used English cucumbers in this recipe and I’ve really been loving those smaller chukes this summer. Their flavor is very similar to regular cucumber but their texture is slightly more tender and they are more petite so less dicing. If you can find them at your grocery store then I definitely suggest using them! Otherwise, regular cucumbers will suit just fine.
There are so many substitutes you can use in this salad. Instead of watermelon, you could use cantaloupe. I like feta or goat cheese in this recipe. If you want to skip the dairy, use roasted and salted pepitas instead. I love fresh dill but chiffonade basil will work great as well. I like a spicy kick to pretty much anything, so I used half of a small serrano. If course you can leave it out all together or substitute a jalapeño or Thai pepper.
A quick drizzle of olive oil and squeeze of lime juice really pull this all together! And don’t forget a little bit of kosher salt too.

Ingredients
- 2 cups seedless watermelon cut into bite-sized chunks
- 1 cup English cucumbers sliced into 1/2inch thick slices
- 1/2 serrano sliced paper thin
- 1/4 cup feta or goat cheese crumbled
- 2 tbsp olive oil
- 2 tbsp fresh dill or basil torn
- 1/2 tsp kosher salt
- 1 lime juice of 1 lime
Instructions
- In a large bowl, combine watermelon chunks and sliced cucumbers with kosher salt.
- Then drizzle with olive oil and lime juice. Add crumbled cheese, serrano and dill or basil. Serve slightly chilled.
