I am not too proud to admit that two summers ago I became a rice krispy treat feign. I was making them weekly. I tried all different types of variations. The most popular where probably the Oreo rendition that I made at least three times around the 4th of July. There is a reason that this simple childhood favorite still stands up. Something about a puffed rice cereal when it gets mixed with butter and marshmallows that just makes it irresistible! Anyways, I wanted to make very slightly elevated version for this holiday and this black sesame one is just the thing!

Black Sesame Rice Krispy Treats
First things first, black sesame seeds are not the same as white sesame seeds. They have a nuttier flavor. I’d place it somewhere between peanut butter and tahini (white sesame seed paste which many people are more familiar with) Black sesame seeds are nuttier but less bitter and almost, almost have a sweetness about them. And to be clear, you should not substitute white sesame seeds in this recipe. I mean you could but it wouldn’t be the same.
If you can find whole black sesame seeds, then I suggest using those. If you can’t, then a black sesame seed paste would work nicely. Many stores will carry black sesame seeds in the spice section.
How To Make Fancy Rice Krispy Treats
You make these rice krispy treats very similarly to the original recipe which calls for just butter, marshmallows and puffed rice cereal. Of course, we want to make these even better so there are a few things to remember. A little pure vanilla extract goes a long way. Seriously. Even just a dash can really bring out the flavors of the black sesame seeds in this recipe. A pinch of salt will also make those flavors pop! I also recommend toasting the sesame seeds for a few seconds to bring out even more flavor.

Black Sesame Rice Krispy Treats
Ingredients
- 3 tbsp black sesame seeds
- 12 tbsp unsalted butter
- 1/2 tsp pure vanilla extract
- 1/8 tsp kosher salt
- 20 oz marshmallows approx 4 cups
- 9 cups crispy rice cereal
Instructions
- In a small pan on low heat, gently toast the sesame seeds for 30-60 seconds until just fragrant. Place into a spice grinder or pestle and mash into a paste. *Amount of oils in the seeds can vary. It may look more like crushed seeds rather than a paste and that is ok.
- In a large pot, melt butter and stir in vanilla, salt and sesame seed paste until well combined. Then add marshmallows and stir until melted and all ingredients are combined.
- In a large bowl, stir together melted marshmallow mixture with rice cereal until well coated. Press into a 9x13in dish or something similar. Let rest and cool for about 20 minutes. Then cut and enjoy! Store in air tight container for a week.
