Cool, creamy, delicious and easy! Do I have your attention now? BMW and I are big fans of meals that we can make on a Sunday afternoon and eat all week. These Easy Greek Medi Bowls fit the bill. We can prep the couscous, lamb meatballs and authentic tzatziki and eat these bowls for quick lunches all week! Best part, the Greek tzatziki is so good on everything from veggies to couscous, it’s a meal we actually look forward to!
Lemon zest and flat leaf parsley are what really bring out the flavors of this recipe, so don’t skip out on those! My tip for making couscous that is delicious every time is cook the couscous in vegetable or chicken broth. This adds SO much flavor! A little extra salt never hurt anyone either 😉
Easy Greek Mediterranean Bowls
Ingredients:
6 Lamb Meatballs (get the recipe here!)
2 cups cooked couscous
1 cup Authentic Greek Tzatziki (this is my fav!)
1/2 cup chopped cucumbers
1/2 cup crumbled feta
1/4 cup kalamata olives
Salt, black pepper and red pepper to taste
lemon wedges
Directions:Â
- Divide couscous between two plates, top each plate with three lamb meatballs and 1/2 cup tzatziki.
- Divide and add cucumbers, olives and feta. Add salt, pepper and lemon wedges to taste!
