Winter is coming… and we are prepared! Haha lately we’ve been spending these chilly evenings cuddled up in front of the fireplace with Mimi rewatching Game of Thrones. I’ve been craving warm and comforting soups and this Hearty Potato Sausage and Kale Soup is a meal that BMW and I can agree on! It’s not a super heavy meal but it’ll fill you up from the potatoes, gets a ton of flavor from the Italian sausage and of course there are greens so that makes me happy!
Hearty Potato Sausage and Kale Soup
I love how quickly this recipe comes together! As in you only need to simmer for about 20 minutes for the flavor to really come together. Delicious soup in less than an hour? I’ll take that, thank you very much! That is exactly what we need at our house after a long day of work. Bonus: this soup freezes well so you can make ahead and have those freezer meals ready to go!
BMW is a freezing maniac. Like not kidding he bought a deep freezer last fall and a Food Saver, this machine that lets you vacuum seal just about anything, and he tries to vacuum seal and freeze just about everything. So far he’s tried several soups (including this one), curries, rice, burritos and of course meats. The soups tend to turn out best if you let them defrost completely before reheating. We set ours in the fridge the night before or in the sink a few hours before we are ready to eat. Oh and I should mention the Food Saver I linked to has an attachment that can vacuum seal wine bottles! Like I said, he’s a maniac, but it works! We kept a bottle of red wine tasting fresh for two weeks in fridge after he vacuum sealed it!
Ok back to soup! We both love the flavors in this soup and think you will too! I like to add crushed red pepper flakes to up the spiciness but it is easy to leave that out. We have subbed regular Italian sausage for the spicy version but I prefer the subtle flavor addition of the spicy. It’s not that spicy once you add the cream to cool it down. Curly kale works well in this recipe because it can handle the heat without getting too soggy. I’ve also used different kinds of potatoes in this recipe and almost any type of potato will work. So work with what ya got in your pantry!
Hearty Potato Sausage and Kale Soup (Zuppa Toscana)
Hearty Potato Sausage and Kale Soup (Zuppa Toscana)
Ingredients
- 32 ounces of low sodium chicken broth
- 1 cup of heavy cream
- 1/2 pound ground hot Italian sausage
- 1/2 pound potatoes red or russet will work, cut into 1.5in cubes
- 2 cups kale chopped and packed
- 1 medium white onion chopped
- 3 garlic cloves minced or pressed
- 2 teaspoons kosher salt
Instructions
- Brown sausage in a large pot over medium heat.
- Next, add onions, salt and garlic and cook until onions have softened about 5-6 minutes more, stirring frequently.
- Add potatoes and kale and pour broth over. Bring to a boil then cover and let simmer for about 10-15 minutes or until potatoes are tender.
- After potatoes are done cooking and are fork tender, add cream, stir together and add salt to taste. Serve hot!
