Valentine’s Day is fun and all but this year I decided to celebrate with my lady pals! You know, the ones who are always there for ya, and will totally indulge your love for all things cookies, pink, and sparkly.
Instead of stressing out about making the perfect restaurant reservation, I like to opt for cooking a big, fun meal at home. In the past I’ve made prime rib with the bf, served up a spicy meal with all my friends and even made this Spicy Chocolate Peanut Butter Pie. This year, I decided to celebrate with a group of my gals pals and focus on fun!
First, we will get together and take a barre class at The Barre Code! It’s perfect because we will get our heart rate up a little without getting too sweaty. Which means there is plenty of time to enjoy some mimosas! And because you always feel a little less guilty about indulging when you’ve done something good for your body!
After our class, we are going to skip the big restaurant brunch and head back to my place for some Galentine’s Day fun. But first, something to sip on! I love a fun signature drink, so that is always fun to prep ahead of time! However some bubbles will always do the trick. Like this extra dry prosecco from Torresella Wines. I used royal icing so that it dries hard and can be made up to two days ahead of time. Then I will leave out the red icing and let my gals write their own fun snippets! Royal Icing Recipe
note: this icing dries very hard over night
4 cups powered sugar
4 egg whites
Food coloring
Directions:
Whip egg whites until frothy in a stand mixer for about 1 minute on medium speed.
Then slowly begin to add the powdered sugar, stopping to scrape down sides when needed.
Let the mixture beat on medium-high speed for 5 to 7 minutes or until it is shiny and peaks begin to form. The icing should be a little stiff. Stir in food coloring and you’re done!
Ice cookies and let them dry over night. Extra icing can be stored in an air tight container in the fridge.
