Prosciutto and Melon Salad with Honey Dijon Vinaigrette is a taste of summer in a bowl! It's a light, fresh, Italian-inspired salad that is easy to make!

Ingredients
  

  • 4 cups mixed greens like arugula and spinach
  • 1 cup cantaloupe diced
  • 1/8 lb prosciutto very thinly sliced
  • 1/2 cup fresh mozzarella torn
  • 1/4 cup fresh basil torn

Honey Dijon VInaigrette

  • 2 tablespoons extra virgin olive oil
  • 2 heaping tablespoons French dijon mustard
  • 1 tablespoon honey
  • 1/2 teaspoon white wine vinegar

Instructions
 

  • Make the Honey Dijon Vinaigrette by whisking together the olive oil, mustard, honey and  vinegar until emulsified. Set aside.
  • Divide and place the greens onto serving dishes.
  • Top greens with diced cantaloupe and torn mozzarella.
  • Add prosciutto to salad by gently rolling the thin slices and placing onto salad.
  • Drizzle salads with Honey Dijon Vinaigrette and top with torn basil. Give it a crack of fresh black pepper if ya like! Serve immediately.
