Ingredients
  

  • 2 cups seedless watermelon cut into bite-sized chunks
  • 1 cup English cucumbers sliced into 1/2inch thick slices
  • 1/2 serrano sliced paper thin
  • 1/4 cup feta or goat cheese crumbled
  • 2 tbsp olive oil
  • 2 tbsp fresh dill or basil torn
  • 1/2 tsp kosher salt
  • 1 lime juice of 1 lime

Instructions
 

  • In a large bowl, combine watermelon chunks and sliced cucumbers with kosher salt.
  • Then drizzle with olive oil and lime juice. Add crumbled cheese, serrano and dill or basil. Serve slightly chilled.
