Ingredients
  

  • 32 ounces of low sodium chicken broth
  • 1 cup of heavy cream
  • 1/2 pound ground hot Italian sausage
  • 1/2 pound potatoes red or russet will work, cut into 1.5in cubes
  • 2 cups kale chopped and packed
  • 1 medium white onion chopped
  • 3 garlic cloves minced or pressed
  • 2 teaspoons kosher salt

Instructions
 

  • Brown sausage in a large pot over medium heat.
  • Next, add onions, salt and garlic and cook until onions have softened about 5-6 minutes more, stirring frequently.
  • Add potatoes and kale and pour broth over. Bring to a boil then cover and let simmer for about 10-15 minutes or until potatoes are tender.
  • After potatoes are done cooking and are fork tender, add cream, stir together and add salt to taste. Serve hot!
